Camp life may thrive on variety, but the traditional evening campfire has remained constant for as long as anyone can remember. The mere mention of a campfire brings back a flood of memories for many summer campers; memories of friends gained, challenges overcome, and a time when all there was to worry about was playing games and growing stronger. Nothing captures the spirit of the summer camp experience quite like the snap-crackle-pop of the hot fire and the magical smell of freshly split logs waiting to get thrown on the flames.

A day at camp is often hectic and wild, and the evening campfire offers everybody a chance to wind down. Camp simply wouldn’t be the same without it. After all, the traditional evening campfire represents more than just a nice way to stay warm on a brisk night; gathering around the fire represents community, the circle of life, and togetherness with friends new and old.

Tradition

Fire has been a life source for all of recorded history, from the first ancient person to rub two sticks together to the diligent camper wielding flint and tinder. For all that time, friends and family have gathered around the fire to tell stories, play games and enjoy good food. (or s’mores, as the case may be!)

Building a fire with only matches, kindling and elbow grease is a chance to pit your wits against nature and enjoy a connection to “the old days” — before light bulbs, or flashlights, or flashlight apps on your smartphone.

Experiencing a campfire, and perhaps even starting one yourself, is a taste of independence for campers, for whom camp is the one of many steps towards independence and self-sufficiency.

Togetherness

Another thing campfires represent is a time for winding down through songs, skits, and theatrical games. Charades is never as funny as just before bedtime, when your best friend is dancing and gesturing desperately to get everybody to guess the right word. Even if you’re feeling tired after a long day of activities, you can count on this to be true: laughter flows freely by firelight. Just watch out for all the camp-related inside jokes!

And of course no mention of campfires is complete without talking about traditional camp songs, especially the kinds that involve audience participation. (“Hey, Burritos!” anybody?) Legend has it that there are campers out there who know so many verses of “The green grass grows all around” that it would take a whole day just to sing it from start to finish. Even if everybody sings out of tune, the harmony comes from the camp community’s commitment to keeping the traditional melodies alive — even the completely goofy ones.

…And of course we can’t forget s’mores!

One part of the fire nobody wants to miss: s’more time! Crafting the perfect golden-brown marshmallow is an art as old as marshmallows and fires. Like any fine art, roasting a marshmallow to perfection is a tricky task that takes hard work and commitment. (Thankfully, perfection is in the eye of the beholder, and truth be told some folks prefer to let them catch fire for a crispy flavor!)

Whether you prefer a classic graham cracker and hershey’s milk chocolate s’more or have your own special recipe — I for one appreciate homemade chocolate chip cookies — roasting marshmallows on a rip-roaring campfire is something nobody forgets.

Plus, it’s just the right amount of sugar to keep you awake for the closing songs, but not so awake that you have trouble drifting into peaceful dreams after lights out!

This stinks! I mean being back home is kind of a buzz kill. School’s no fun, homework’s lame and dealing with my little bro is like, BRUTAL! All I can think about is how much fun I had away from here, with all my friends and so many awesome things to do!

But the reality is, I’m stuck here for 9 more months, until I can go back to camp. So I asked my Mom, if we could make some real camp food – you know, to bring me back! I figured she’d be game, since she says she needs new ideas and gets tired of making the same stuff over and over again. So we’re bringing camp home YO! How cool is that? Check out the recipes below, for some yummy goodness you can make at home. You gettin’ me? Oh, and no campfire needed!

HOBO DINNERS – makes 4 servings

1 pk. – Ground beef

2 TBS. – Olive oil

Dash – Salt and pepper

3 – Potatoes

2 med. – Red eppers

2 med. – Tomatoes

1 – Yellow Onion

½ c. – Salsa

4-6 – tortillas

Tear off four squares of tin foil, lay each one out and portion out ¼ cup of ground beef, dash of salt and pepper and 1-2 teaspoons of olive oil for each. Then personalize it! Chop up the vegetables and add the ones you like to your Hobo dinner and add a little salsa. Fold up each tin foild square and bake at 350 degrees, on the middle oven rack for 45 minutes. Whala!! Eat it right out of the foil pouch or scoop all the ingredients into a tortilla. Now this is chow! Yum!

TACOS IN A BAG – makes 4 servings

4 – individual bags of tortilla chips

1 lb. pk – grass fed hamburger

¼ c. – taco seasoning mix

1/8 c. – water

½ c. – salsa

½ c. – tofu sour cream

Lettuce

Brown the hamburger until well cooked. Drain. Add in the taco seasoning and water. Simmer for 10 minutes. Crunch each bag of tortilla chips. Add hamburger, salsa lettuce and sour cream to each tortilla chip packet. Crunch with a fork and munch! It’s so easy it’s cray, cray!

SMORES DIP – makes 4 servings

1 pkg. – chocolate chips

1 pkg. – large marshmallows

2 pkgs. – graham crackers for dipping

Pour the chocolate chips in an 8 X 8 pan. Set large marshmallows on end, covering the chocolate chips. Bake at 350 degrees for five minutes or until melted. Serve with graham crackers. Dig in and dip away!

CAMPFIRE CONES – makes 4 servings

4 – waffle or sugar ice cream cones

1 c. – marshmallows

1 – banana

1 c. – chocolate chips

Preheat oven to 350. Fill each cone with as much bananas, chocolate chips and marshmallows as you want. Wrap each cone in aluminum foil and bake for 8-10 minutes. Unwrap and grub down!

Take a glance into our dining hall and you will get a look into our culture here; the spirit of togetherness and inclusion, the value of a positive attitude, and the importance of not taking yourself too seriously. After all, isn’t that what life is all about?

Our kitchen team is among the best in the business, with over 40 years of culinary experience between the chefs. They do a great job preparing healthy, fun meals that keep the campers and staff going all day long.

We spend a lot of time each year planning our menus for each summer. In doing so, we take into account nutrition, variety, and our campers’ past experience and tastes. While all the food is good at Camp Weequahic, there are a few meals that stand out!

It seems like no matter what we do, our campers’ favorite breakfast is our Sticky Icky Bread. It’s a sweet breakfast treat that our campers’ just can’t seem to get enough of.

For lunch, there is less of a clear-cut favorite. Our chicken and cheese quesadillas are always a big hit as are the sliders. We also have a big contingent of campers and staff who love the chicken Caesar salad day, while others take their time building the perfect salad from our freshly prepared salad bars.

As for dinner, the hands down favorite is our cookouts. Whether it’s the hamburgers, veggie burgers, hot dogs or grilled veggies that the kids love, they all can’t wait to get outside, enjoy each other’s company, and have a meal at the end of the day. As for the runner ups for ‘favorite dinner’, taco night or the Hollywood dinner are always big.

The good news is the kids feel that we always have good, fun, and healthy choices. There is also always something for everyone, even those campers whose tastes seem to be a bit more of a challenge. How do we know? We ask! Menu items that are not well received are removed from the options and new foods are added. Thanks to the feedback from our campers and staff, we’ve added more options to our salad bars, increased the variety of veggies offered, and come up with fun new desserts.

If you’ve ever been to camp, then you know what wacky mac is and, chances are, you get a bit of a nostalgic feeling when you pass it in supermarket aisles. You also know that bug juice is not made from bugs, s’mores are best made over a campfire, and that knish is the perfect side dish for a cookout. Campers who jumps out of bed every morning and race to breakfast, hoping that it’s chocolate chip pancakes as well as those who can’t get enough of the pizza, know that camp food is as much a part of the camp experience as the activities. Like many other camp traditions, the menus constantly evolve to meet the current demands of campers.

One major concern that is heavily influencing camp menus is the growing awareness of the importance of developing healthy eating habits early in life. Camps are introducing new menu items as well as opting for healthier versions of current ones. Items such as Greek yogurt, hummus, guacamole, and wraps are finding their way onto camp menus to combine with salad bars, which are longtime camp dining staples, to give campers and staff more nutritional options at meal times. Lite dressings are also appearing alongside regular ones and more fruit and vegetable choices are being offered. But the camp food revolution doesn’t begin and end at the camp salad bar.

Bug juice is now a lot less sugary at many camps, and some have even done away with it altogether. Camps are increasingly using olive oil instead of vegetable oil and are playing around with herb and spice combinations to enhance the taste of the food. This isn’t to say that some traditional camp favorites are disappearing off of menus. Grilled cheese, pasta, and chicken fingers are all still very much camp fare. Camps are just trying to make healthier versions of them by using fresher ingredients and fewer pre-packaged ones.

Campers are very enthusiastic about the recent trends in camp food. Today’s campers have savvy palates, and they like that favorite foods and ingredients that have traditionally not been available at camp are finding their way onto menus and that some of their favorites are getting nutritional makeovers. Meal times are important parts of camp each day. They are times for the camp to come together and dine as a family. They are times for singing, cheering, and catching up. Perhaps that why camp food is such a key part of camp.

“What about food?”
This is undeniably one of the biggest questions posed to summer camp directors from prospective parents who not only want to know what their children will be fed during the summer, but when and how. Although serving styles vary—some camps eat “family style” while others serve buffet style–a day of food is fairly similar from camp to camp and an important aspect of the daily camp schedule. So America’s Finest Summer Camps has decided to dedicate an entire blog to a typical camp eating schedule.
Shortly after waking up in the morning, campers head off to breakfast. Aside from a hot entrée choice such as eggs, pancakes, french toast or oatmeal, several cold staples like cereal, bagels, fruit, and yogurt are also available to ensure that campers have plenty of fuel for morning activities.

Around mid-day, everyone takes a break from the fun in order to eat lunch, which is usually the same fare they might expect to eat for lunch at home like pizza, macaroni and cheese, or sandwiches. A soup and/or salad bar is also typically available.

Many camps also offer fruit or a snack in the late morning or afternoon, to keep campers energized throughout the day.
.
After a full day of adventure, campers need to re-fuel, and dinner fare appropriately reflects that. As with lunch, the choices are typical of what they might expect to eat at their evening
meal at home such as pasta, meat and potatoes, tacos, etc. A large salad bar is also typically available at dinner, and dessert is served as well.

Before going to bed, children often get a snack or a chance to go to their camp’s canteen for a special treat.

In addition to the primary meal and snack schedule, throughout the day, children may enjoy other snacks or treats while participating in their camp’s cooking program, during a bunk or cabin mate’s birthday celebration, or as part of a special event. It should also put parents’ minds at ease knowing that when constructing their menus, many camps purposely design meal combinations that quickly replenish energy and/or consult nutritionists.

Food allergies are also typically addressed. Many sleepaway camps do not serve any tree nut products and those that do take great strides to insure that campers with allergies do not come into contact with them. Some make soy milk available to those with lactose intolerance and/or provide special gluten free bread to those with wheat allergies.

Camp meal schedules are also extremely important to the daily camp schedule because they help campers and staff mark time throughout the day. Since meals and snacks are served consistently at regular times, they contribute heavily to summer camp routines and help campers define their expectations.

And our hats are off to Wayne, the tireless Chef who feeds our entire camp as if we were his family. After 15 summers at Weequahic, it is no surprise as this has become his summer home. Supported by a cheerful staff each meal is fresh, ready and waiting as our ravenous campers enter the building. Wayne’s primary objective is to keep the campers healthy and happy. To that end, he collaborates with Cole to provide a camper-centric and healthy menu.

Full of loud cheer, the chanting is voluminous and spirited. Table games keep groups amused, while others enjoy the opportunity to sit and chat over a tasty meal. The energy is infectious and laughter contagious. It is where we celebrate birthdays, share announcements, honor sports teams or simply sing. After a long summer day, the air conditioned dining hall is an added bonus for all.

Whether dining on eggs, ham and English muffins, pizza or matzo ball soup and baked chicken, smiles abound. The food is delicious and among the campers favorites are: Maryland style Fried Chicken, Sloppy Joes, Grilled Cheese and Tomato Soup, and Chicken Nuggets. A nutritious salad bar is always available stocked by the friendly Jared and it is refreshing to see how many campers enjoy this option. His homemade dressings and daily surprises keep the campers coming back each lunch and dinner. The occasional BBQ meal is a nice break from the dining hall where campers gather to eat in the picnic area. It is such a pleasure to dine amidst such a beautiful setting.

Alan the Baker, otherwise known as ATB, is busy baking homemade treats for all. After 21 years in our kitchen, he claims the kids love the brownies or chocolate chip cake most of all. Campers may argue that the Black and Whites may be a close second. Thanks to ATB the kids enjoy homemade breads with every meal including, French, Italian and Chala breads. It is the variety of all baked goods that he strives for, he is always thinking about the campers. The fresh fruit and fruit bowls are always a nice touch.

Weequahic’s hearty meals keep all the campers and staff going day in and day out. A big thanks to the kitchen for their hard work and care!
